Amandes & Noisettes Blond Dulcey - Almonds and hazelnuts in white chocolate

Spanish almonds and Italian hazelnuts, both the best in the world, they say, are coated in white chocolate. The Blond Dulcey has a beige color, hence the name Blond and 35% cocoa content. It was created by accident because Frédéric Bau, the patissier at Valrhona, forgot to take the Couverture out of the heating bath. The sugar and milk must have caramelised and the blonde colour was the result. The flavor has notes of toasted shortbread and, of course, caramelized milk. Valrhona has patented the idea.

The nuts combine well with the light chocolate for a crunchy, sweet finish.
