Specialty from Provence

Calissons are a regional specialty from Aix en Provence in France. It was invented in the Middle Ages at the court of Roi René. At his wedding he wanted to make his future wife happy and commissioned his pastry chef to create something. Since almonds grow in Provence, he invented a pastry made from chopped almonds, candied melon and sugar syrup. The shape was elliptical, similar to a shuttle. He put the whole mixture on a wafer and decorated it with icing. The bride seemed to have enjoyed the sweet seduction, because she rewarded the cake maker with her most beautiful smile. When looking for a name, the king remembered: Ce sont des calins! Caresses, which later became the calissons.
