Les Tropiques du Chocolat - Equateur Trinitario 75% - Dark chocolate made from Trinitario cocoa 75% organically grown.

The chocolate is strong on the nose and is very fruity with a taste of dried figs and citrus fruits. The finish is a little bit tart with light but persistent acidic notes.

The cocoa for this chocolate comes from a small cooperative near Buena Fe in the Los Rios province inland. The cocoa variety is that National Cacao, which is very similar to the Criollo and is sometimes confused. The cocoa beans themselves are larger than Criollo's and have far more tannins. The cocoa variety is also known under the name Arriba.
