Hojicha - White chocolate with Houjicha, roasted green tea

This originally white chocolate has flavors that we describe as roasted tea, malt, hay and grass, honey. Houjicha or Hojicha, is the Japanese roasted tea that has been used in Japan for centuries and has a fine aroma. The tea together with the high cocoa butter content ensures that we do not perceive the sugar as sweet as it is from white chocolate. The chocolate is also very tender. The cocoa beans from this bar come from the Dominican Republic and are 100% Fairtrade certified. They are also produced according to organic specifications; but currently not certified.

This bar is an idea by Kevin Lühmann, chocolate sommelier from Hanover with the aim of producing and offering the latest chocolate trends from Japan here in Germany in excellent quality. The recipe and idea come from Kevin Lühmann. He travels to Japan regularly and gives courses on the Japanese chocolate market. The chocolate is made in Brandenburg, at the Bean-To-Bar Chocolate manufacturer Edelmond Chocolatiers from Luckau.

Azusa Sumioka made the illustration for the panel. It depicts a Japanese koi carp. The Japanese graphic designer studied for several semesters in Hanover.
