Auf der Insel Madagascar im Sambirano Tal gibt es Kakaoplantagen, wo hervorragender Kakao wächst. Viele gute Chocolatiers haben hier entweder eine eigene Plantage, wie zum Beispiel Francois Pralus, Michel Cluizel und Bertil Akesson oder sie haben Abnahmeverträge mit den Kakaobauern. Auf diese Weise ist garantiert, dass sie die beste Qualität an Kakao bekommen. Neben der Edelsorte Trinitario, bauen Pralus und Akesson auf ihren Plantagen auch Criollo Kakao an. Dieser hat besonders wenig Säure und viele Fruchtnoten nach Mango und tropischen Früchten, typisch für Madagaskar.
