The cocoa beans for this chocolate come exclusively from the organic plantation Crayfish Bay in the north of Grenada. Pump Street Chocolate imports the beans directly and uses them to make this delicious chocolate.

Apart from cocoa beans, cane sugar and organic cocoa butter, it contains nothing. A real bean-to-bar chocolate consists only of the components of cocoa beans and sugar, nothing else.

A good chocolate can never be made without proper fermentation. The temperature and the constant acidity are important here. In order to hold this for the first 48 hours, at least 500 pounds of cocoa beans must be fermented together. For this they come in a fermentation box and are covered with banana leaves. They are turned for the first time after 48 hours, then daily. The process takes 5-7 days. After that, the beans have lost almost half their weight and turned brown in color. The still sticky beans are then dried. Subsequently sent to England.

Pump Street Chocolate 70% Grenada Crayfish Bay Chocolate is the only single estate chocolate from these cocoa beans.
