The cacao comes from the easternmost part of Cuba, from Baracoa in the province of Guantanamo. Baracoa was the first capital of the island and has not yet been discovered by tourists. In the forests grows cacao, banana trees and coconut palms, which are tended by small farmers.

The chocolate has 71% cocoa content and flavors of rum, tobacco, cane sugar, cream, mahogany and palm wood. It is made in Nicola Knight 's small kitchen in Exeter in England.

It is a stoneground chocolate because Nicola uses a mélangeur with stone mills to grind and conch the cacao beans and sugar.
