Chuno 70% Triple Turned Chocolate from Nicaragua

Chocolate made from Chuno cocoa beans

The chocolate is made from the Criollo / Trinitario variety found on three isolated farms in Northern Nicaragua at 300-800 m above sea level. The taste is simple, without rough edges, classic with a balanced acidity and express notes of black olives and lemon peel. The beans were rotated three times during the 5 day fermentation to aerate, creating an incredibly dark, intense note of acidity. Our beans, which are only turned twice, give a lighter, nuttier taste with spicy notes.
