The island is the perfect environment for growing cocoa. The fermentation process is particularly carefully monitored to get the fine, fruity notes bring forth. The chocolate has notes of cherries, raspberries and currants and in the finish slight notes of roasted almonds and raspberries.

Valrhona has worked with cocoa farmers for years to perfect fermentation and drying. The result is a chocolate with aromas of candied, yellow fruits such as pineapple, paired with notes of almonds.
