The Rose Hill Estate is located at the foot of the Tamana Mountains in the north east of Trinidad . The area has a long cocoa tradition. The cocoa variety Trinitario takes its name from the island. Duane Dove is leasing the plantation from the owners, the cocoa farmers. You will be trained in cultivation, care and, above all, the post-harvest. The typical aromas develop during fermentation and careful drying. 90% of the taste of a chocolate is created on the plantation, which is why the steps after harvest are so important. Rose Hill Estate is BIO certified by USDA on December 24, 2018.
