Fine Flavour Stoll Coffee

Two Colombians combined in one chocolate bar: for this Fine Flavor coffee chocolate, the noble B8 Light Brown cacao variety from the cooperative Cacao Betulia  was combined with Diego Samuel coffee beans from Stoll Kaffee.

The Hacienda Betulia east of Medellin was named Colombia's most innovative farm in 2018 by the FEDERACION Nacional DE CACAOTEROS. The Swiss-Colombian family business has been tinkering for years and has now been able to realize its vision of a Colombian Criollo with rare and complex flavors. The Hacienda works in a modern and sustainable way. This includes scientific soil analysis, genetic testing of cacao varieties, application of sustainable agricultural practices, and a sophisticated fermentation system.

Diego Samuel's coffee is an explosive charge of complex, fruity aromatics, most prominently preceded by peach. Diego and his family specialize in the delicate Geisha varietal on their farm in Cauca, developing their own processing and fermentation methods. It is a beautiful representative of an extremely diverse and high quality Arabica variety.

The cacao from only one vintage was roasted for 21 minutes and then conched with all ingredients including the coffee for 75 hours.
