Cocoa and coffee varieties

Basically, there are two types of coffee: Arabica and Robusta, from which more and more varieties have been developed (e.g. Typica, Castillo, Caturra). Similarly, cocoa beans. Researchers thought for a long time that there are only 3 varieties - Forastero, Trinitario and Criollo. However, more than 10 "major varieties" have now been found, and researchers believe they will find many more. In addition, there is a bred very resistant and high-yielding hybrid: CCN-51. This is known for its "performance", but at the same time its taste is quite neutral. In contrast, other cocoa varieties - especially fine cocoa beans - offer a unique flavor that is extremely interesting and delicious.

Coffee and cocoa beans are two different plants, although the beans look quite similar. The cacao tree bears its cacao pods directly on its trunk. The evergreen cacao trees grow up to 20 degrees north and south of the equator. Cocoa pods come in different colors (which, by the way, says nothing about the cocoa variety) and different sizes, and thus range from about 25-50 cocoa beans. For a dark chocolate one needs approx. 2 cocoa pods. Coffee also grows around the equator. Coffee beans, on the other hand, are made from coffee cherries, which produce two beans from one cherry. Cocoa and coffee go through the same processing steps until they are roasted.
