Prelibato Condimento Bianco - Dressing

It tastes aromatically fresh, less acidic and much fruitier than normal white wine vinegar.

This dressing is made from the grapes of the variety Trebbiano Modenese, which are processed gently and slowly. The resulting juice is  white, transparent and unfiltered. After filtration and centrifuging, which first thickens the juice, comes 5 years of aging in ash wood barrels. The Malpighi family chose ash because its aroma is delicate, its color is clear and, above all, because it gives off very little of its coloring. Thus, the condimento remains almost completely transparent and has an unimaginable density of aromas.
By the way, condimento means seasoning. It is a mixture of vinegar and grape must.
