Taiwan #9 Double Ferment Rough Ground Chocolate 70%

Bean-To-Bar Chocolate

Fu Wan Chocolate is a family business in Taiwan in the south of the country in Ping Tung County about 20 km east of the South China Sea. Warren Hsu is a chef and sommelier and has transferred some steps from wine making to chocolate making. Obviously successful, as you can see from the numerous awards.

This chocolate has been fermented twice and only coarsely ground. Presumably, he uses more yeast. What exactly he does, Warren does not reveal. Understandable. Let's enjoy that or the secrets of his chocolate.

The cacao beans come from the region around Ping Tung, partly from his own resort. Waren Hsu processes the cacao beans from bean to bar at his resort with its own fermentation rooms and drying facilities.
