Taiwan #9 Double Ferment Rough Ground Chocolate 70% dunkle Schokolade

Fu Wan Chocolate ist ein Familienbetrieb in Taiwan im Süden des Landes im Landkreis Ping Tung etwa 20 km östlich des Südchinesischen Meeres. Warren Hsu ist Koch und Sommelier und hat einige Schritte aus der Weinherstellung auf die Herstellung von Schokolade übertragen. Offensichtlich erfolgreich, wie man an den zahlreichen Preisen sieht.

Diese Schokolade wurde zweimal fermentiert und nur grob zermahlen. Vermutlich verwendet er weitere Hefe. Was genau er macht, verrät Warren nicht. Verständlich. Geniessen wir das oder die Geheimnisse seiner Schokolade.

Die Kakaobohnen kommen aus der Region um Ping Tung, zum Teil von seinem eigenen Resort. Waren Hsu verarbeitet die Kakaobohnen von der Bohne bis zur Tafel auf seinem Resort mit eigenen Fermentationsräumen und Trockungsanlagen.
