Bean-To-Bar Chocolate from the Philippines

The cocoa for this chocolate comes from the Philippines. Kablon Farm is located in the south of the island in the Tupi region in South Cotabato. The farm is 500m above sea level and is about 10 km from Mount Matutum. The volcano last erupted in 1911 and defined the ground within a radius of 25 km. In addition, worm composting is carried out on the farm, the soil of which helps reduce plant germs. All in all, very good conditions for growing cocoa.

Cocoa has been around in the Philippines for 400 years. He came into the country by ship from South America at the time of the Spanish colonization. Usually it was high-quality Criollo cocoa that the seafarers brought with them.

The cocoa sector in the Philippines consists of many small cocoa farmers who supply medium-sized cocoa producers. However, local production is not enough to meet demand in the country. The biggest problem is the lack of knowledge about the correct fermentation and drying of cocoa beans, the right equipment and premises to be able to use them for the production of cocoa. Far more cocoa is therefore imported than exported.

However, some farms know very well how good quality cocoa is achieved and can sell it for a premium price. The Kablon Farm is one of these plantations.

The Bean-to-Bar chocolate is lactose-free, lecithin-free, gluten-free, vegan and is made without soy.

Mark Schimmel, the owner of Krak Chocolade , won bronze for the chocolate 70% De Filipijen - Kablon Farms at the International Chocolate Awards Europe 2017 .
