in the diamond shaped metal canEight small, classic Calissons from Provence are in the elegant, diamond-shaped metal box. The specialty from Provence is made from peeled almonds, candied melon pieces and natural sugar syrup. When the dough is kneaded, bitter almond oil is added to give the Calissons their typical marzipan flavor. At Le Roy René, the classic recipe is enhanced with candied orange peel.
On the pastry, shaped like a weaver's shuttle, a white layer of beaten egg white is spread, it is called "Glacage Royale", which means royal icing. Nothing works without this glaze. They are the hallmark of the traditional Calissons.
