The combined course takes you directly to the intermediate level in a concentrated four-day workshop course.

Level 1 provides an introduction to the sensory approach to chocolate tasting and a good basic education in chocolate tasting, including tasting 9 or more chocolate bars of different origins or mixed fine dark chocolate bars tasted in various forms to understand aroma, length, texture and flavor.

The first day ends with a 30-minute multiple-choice exam for Level 1 based on the course content. Certificates will be issued upon achievement of the minimum score.

The advanced level 2 course delves deeper into the world of fine and origin chocolate, looking in detail at the styles of different chocolate makers and the different approaches to chocolate making, from micro-batch to large format. Treatment and defects in cocoa will be explored as well as the chocolate production chain and how these contribute to flavor.

The course explores the history of chocolate with an emphasis on flavor and the current chocolate market. Over 25 chocolate bars and samples will be tasted, with repeated tasting, profiling and blind tasting to gain a full understanding.

Level 2 will introduce the Institute of Chocolate's online evaluation system, which will be used throughout the course while working with laptops and tablets. Spare tablets will be provided if you are unable to bring your own device.

The course spans three intensive days and provides a more comprehensive understanding of fine chocolate and its flavor possibilities.

The course concludes on the last day with a 60-minute multiple-choice exam based on the course content and a blind tasting test. If you achieve the minimum score, you will receive your certificate.
If you pass, this qualifies you as a judge for the International Chocolate Awards and allows you to judge chocolate at regional and world competitions worldwide. You will also have acquired the basics for the Level 3 course, where you can travel to cocoa plantations and work with a chocolatier for several days. Upon passing Level 3, you will receive your IHK certificate.
