The dark chocolate is made from cocoa beans also from Colombia. The chocolate has a cocoa content of 77% and is refined with roasted cocoa bean nibs from Nicaragua . The bean-to-bar chocolate is ground in a stone mill for up to 100 hours.

Kay Keusen roasts the cocoa beans for 23 minutes and then conches them for 98 hours. The gentle roasting and long conching time give the chocolate its creamy taste. The cocoa beans are from the harvest year 201 and come from the Hacienda Betulia in Colombia.

The Colombia 77% chocolate with cacao nibs is a limited edition.
