Andreas Muschler chocolaterie - pâtisserie

Master confectioner Andreas Muschler comes from a family of bakers and confectioners in Freising, north of Munich.  After completing his apprenticeship, he first moved to Vienna to work at the Hofzuckerbäckerei Gerstner und Demel. He then attended the Master Craftsman School in Munich and graduated with the "Master Craftsman Award of the Bavarian State Government".  He spent traineeships in various hotels and confectioneries until he was finally drawn to Paris in 2009, where he learned the French art of pâtisserie from Pierre Hermé. Further stations were the chocolaterie of Jean-Charles Rochoux in Paris and the praline and macaron manufactory of Pierre Hermé in Alsace.

In May 2014, he opened his own glass chocolaterie & pâtisserie Andreas Muschler in Freising. There, delicious chocolates, tartlets, macarons and chocolate are made by hand.

Award-winning chocolates from master hand

Guests can see every handicraft move in the manufactory. They can observe the many steps and details that have to be carried out until a small, sweet work of art in the form of a tartlet is created. Andreas Muschler uses only the very best ingredients, such as Couverture from the houses Valrhona and Felchlin and regional products.  He also uses alternative flours, such as spelt flour, and makes vegan chocolates and tarts.

Andreas Muschler has also made an invention: the Freising egg, a chocolate egg with the most important sights of the city. At the International Chocolate Awards his chocolates have already won many prizes. The master confectioner attaches great importance to ensuring that each piece produced is a masterpiece: "Better to do less, but do it well!"
