The terms truffle and Pralines are often used as synonyms. In fact, the truffle is a special form of praline. It is almost exclusively soft, i.e. without a crunchy chocolate shell like a classic praline, and consists of a ganache which, after cooling, is formed into small balls and rolled by hand, or cut with a "harp" as a sliced truffle.
The truffles-Pralines consist of a chocolate mass as well as cream or water, which is boiled up with whisky, champagne or other ingredients such as vanilla or spices. Refined with crunchy cocoa nibs, dried fruit pieces or caramel chips, the delicious little chocolate truffles also get one or the other highlight or are classically rolled in cocoa powder or powdered sugar. The chocolate truffle gets its name from the external similarity of the shape with the rare and expensive truffle mushrooms.
