Goodnow sources the high-quality Nacional-hybrid cacao from the Salazar family in northern Ecuador, which owns a 100-acre cacao farm there with state-of-the-art cacao fermentation and drying facilities. The crops are large enough to ferment and dry themselves, allowing a high degree of control over these important post-harvest processing steps. This results in beans of very high quality and exceptional flavor. The result is a combination of berry jam and Cabernet grapes. Esmeraldas has a low acidity and a slightly astringent taste. A long and satisfying aftertaste makes this Chocolate a Indulgence.
