Kinako - japanische Schokolade mit geröstetem Sojabohnenpulver

Kinako wird zu 100% aus gerösteten Sojabohnen hergestellt und ist eine traditionelle Zutat in typisch japanischen Süßwaren (Wagashi, Mochi etc.). Aber erst 2018 hat der erste japanische Chocolatier das Kinako in Kombination mit Schokolade eingesetzt. Kinako wird gemahlen und wird hier als Aufstreuung benutzt. Kinako hinterlässt auf der Zunge einen sehr feinkrümeligen, leicht nussigen Eindruck und passt gut zum puren Kakaogeschmack, der noch lange im Mund verbleibt.

Die Kakaobohnen stammen aus der Kolumbien Sierra Nevada und sind komplett nach Bio-Standard produziert; allerdings aktuell nicht zertifiziert,

Hergestellt wird die Schokolade in den Niederlanden von Krak Chocolade nach japanischen Rezepten von Kevin Lühmann, Schokoladen-Sommelier aus Hannover.
