Omnom Chocolate

Omnom Chocolate is a chocolate manufacturer based in Reykjavík, Iceland and have won many awards for their chocolates and award-winning.

Kjartan Gíslason is a trained chef who had worked for the well-known Dill restaurant in Reykjavík. He opened the chocolate manufactory Omnom of an old gas station with his old school friend Óskar Þórðarson in 2013! In Icelandic it means: Its fun and delicious = Omnom. in 2017 they were bursting at the seams and moved to the hip Grandi area near Reykjavik's harbor area.

Bean-To-Bar Chocolate

There are no artificial additives in the Bean-To-Bar chocolate from Omnom. Everything is made from the bean to the finished bar itself. Due to the own processing of cocoa beans, the taste can be worked out during the production of the chocolate itself and better. The roasting of the cocoa beans, the roasting time and roasting temperature plays a major role. Handmade and produced about 2,000 bars a day. Each batch / batch is less than 200 kg in size. In comparison, large-scale industry produces 2,000 bars per hour with batches of more than 20 tons.

Cocoa beans

Cocoa beans from Nicaragua of the Ingemann variety O'Payo™ is now a registered trademark. From Bertil Akesson's Ambanja plantation come the fruity cocoa beans from Madagascar. From Tanzania from Kakao Kamili in the Kilombero Valley come Organic cocoa beans, which are processed under controlled fermentation and drying. 

The raw cane sugar from Brazil comes from the Native Green Cane Project, under which deforestation is reversed by replanting new plants. In addition, biodiversity has been promoted since 1986.

Chocolate with ingredients from Iceland

The milk for the milk powder comes from local cows and is produced under CO²-free conditions. The cows themselves are kept under controlled animal welfare conditions. Most industrial manufacturers use milk powder and sugar to mask unwanted flavors Omnom tries to use the milk powder to bring out certain flavors that are already naturally present in cocoa, coffee beans or licorice.

Saltverk is a sustainable salt plant in Iceland, started by entrepreneur friend Björn Jónsson. He even gave up his career as an engineer to harvest salt in this abandoned area. He restarted a 240-year-old process to extract flaky sea salt.
