Diese zuckerfrei hergestellte Schokolade wird aus den Bio Kakaobohnen Gran Nativo Blanco Ultra Premium aus Peru hergestellt.Diese seltenen Kakaobohnen sind besonders, weil sie einen hohen Criolloanteil haben. Sie wurden 2008 in Alto Piura im Norden von Peru wiederentdeckt. Die Kooperative Norandino suchte die besten Bäume heraus und baute diese alte Kakaosorte wieder an. Die Kakaoschoten werden nur vollreif geerntet und in einer zentralen Fermentations-Station für ca sechs Tage fermentiert und täglich gewendet. Sie werden an der Luft sorgsam getrocknet.

Der Kakao hat schon viele Preise gewonnen, gute Schokoladenhersteller, zu denen wir Omnom auch zählen, verstehen es die feinen Aromen herauszukitzeln und die Bitterstoffen durch einen optimalen Röstprozess verschwinden zu lassen.
