ChocoMe
Gábor Mészáros is a passionate patissier and founded ChocMe in Budapest in 2009.
Before that, he visited various cocoa plantations around the equator and spent a few weeks in the Caribbean on a plantation to learn. He wanted to understand the entire chocolate making process from the beginning. This includes understanding the cultivation of cacao, fermentation and its effect on the flavor of the cacao, and drying. The quality of the cocoa beans, fermentation and drying of the beans are crucial to the flavors of the cocoa and therefore immensely important.
He later learned the art of chocolate making in Paris and had his own Couverture ChocoMe Délice created. It is made from Peruvian and cocoa beans from the Dominican Republic.
For more than 10 years, Gábor Mészáros has been producing chocolate bars, chocolate-coated nuts and other delicacies in his manufactory. We have a selection of his ChocoMe chocolates here in our online store.
Lyophilized fruits
The lyophilization process involves first freezing, then slowly heating at extremely low pressure, the moist products containing water that are to be dried. The water frozen to ice "escapes" from it, more precisely, the ice, omitting the liquid phase, turns into steam without transition, i.e. it sublimates.
Freeze drying has two major advantages over traditional drying. The first advantage is that the dried product is not exposed to a significant heat effect, thanks to which the valuable components are not damaged. The vitamins do not decompose, the color and aroma of the product are preserved, and the fructose is not damaged either. The other great advantage is that during the drying process liquid water is not produced for a single moment, which means that there is also no evaporation. Therefore, the valuable substances do not escape from the fruit with the evaporation, but they are fully preserved in it. This means that nothing has to be "replaced" later, therefore the fruits dried in this way do not contain any added flavors, sugar, colorants, artificial vitamins and minerals, everything is preserved in them in its original state.
