Tiroler Edle

In 2001,Therese Fiegl initiated the idea of producing a special Tyrolean product from milk from Tyrolean gray c attle: Tiroler Edle-Schokolade. Tyrolean Grey cattle have been native to the Tyrolean mountains for over 3,000 years. They are kept by only a few farmers. The valuable milk is collected especially for Tiroler Ed le. At altitudes of around 2,000 m, the cattle find an incomparable variety of flowers, herbs and grasses, which particularly characterize the taste of the milk. The animals spend the whole summer on the alpine pasture and do not get any concentrated feed. Because it is too warm for chocolate production in summer and the animals are on the alpine pasture, there is a summer break in chocolate production.

Master confectioner Hansjörg Haag developed all the recipes at Tiroler Edle. He only uses ingredients that he can see from the window, so you won't find chili, pepper or ginger in his chocolates. Another partner is Christoph Kössler, who produces the fine spirits for the chocolates. He has already been awarded many international prizes award-winning. His secret lies in the handpicked quality of his fruit.

Chocolate with milk from Tyrolean grey cattle

In addition to the pure bars of the Purissima line, Hansjörg Haag produces filled bars of chocolate with regional ingredients or noble brandies, handmade confectionery and caramel cream in his small manufactory. In all products, strong attention is paid to the sustainability of the ingredients used.

Tiroler Edle works with two small, exclusive couverture manufacturers, both of which produce the highest quality. In addition, both companies emphasize sustainable cultivation and fair dealings with their partners. The cocoa farmers receive a price for their cocoa that is far above the Fairtrade level.

We recommend the Purissima Maxima 70% dark chocolate with milk instead of sugar and the filled chocolate with nougat or walnut filling. On an ice cream or on a waffle, the noble caramel cream goes just as well as with a piece of cake.
