Smoky, earthy and leathery notes, chocolaty, slight acidity of grapefruit and lime, yet creamy.

Papua New Guinea is still relatively untouched. The country is not even fully mapped yet. There are beautiful beaches and coral reefs. In the interior volcanoes are active and rainforests intact. 

There is a tropical climate, temperatures start at 26°-27°C and rise to almost 40°C in the rainy season. The dry season is relatively short from June to September. The rest of the year it rains so hard that the roads are flooded or so muddy that you can't move forward. Because of the humid climate, the cocoa beans are usually dried over fires, and the cocoa farmers have to be careful that the smoke doesn't completely envelop them and mask the subtle flavors.

Art Pollard, the founder and chocolatemaker at Amano is a master of his craft. He is one of the pioneers of the American Bean-To-Bar chocolate movement. He likes to use real vanilla to round out the flavor.
