Der Kakao für diese Tafelschokolade kommt von Öko-Caribe im Nordosten der Insel aus Pimental. Öko-Caribe ist ein Pionier im Bio-Anbau von Kakao. Die Region Duarte ist die größte Anbauregion der Insel. Öko-Caribe arbeitet mit 150 Kleinbauern zusammen, die den Kakao anbauen. Sie werden von Öko-Caribe geschult und bei der Bio Zertifizierung unterstützt.

Jens Kamin stellt die Schokolade in seiner kleinen Manufaktur in Santo Domingo im Bean-to-Bar Verfahren her. Definite Chocolate ist noch nicht Bio-zertifiziert.
