Die indigene Gemeinschaft des Regenwaldes im Amazonas haben Tucupi schon vor Jahrtausenden zubereitet. Sie verwenden fermentierte Maniok Stärke und Chillies, die über Holzfeuer in einem langwierigen Prozess gekocht werden. Der Geschmack von Tucupi is reichhaltig, würzig und rauchig mit einer angenehmen Umami Note. Es ist eine wichtige Würzmischung, die in vielen Küchen verwendet wird.

Wir wollen mit Tucupi einem relativ unbekannten Gewürz Anerkennung verschaffen, das eine unerwartete Symphonie an Aromen hervorbringt.
