How this taste miracle came about: During a patisserie demonstration, Valrhona's creative director Frédéric Bau left white chocolate in a water bath for too long. When he noticed it, he noticed that the chocolate had turned blond and gave off a delicate scent of toasted shortcrust pastry and caramelized milk. It took 8 years of research and development to perfect a unique recipe that opened up a whole new world of creations and flavors and to create the Dulcey as we know it today.
