Colombia 70% Zartbitterschokolade Betulia Ocho

Der Kakao kommt aus Kolumbien von der Hacienda Betulia Antioquia und heißt Betulia Ocho (8). Der Kakao hat einen hohen Criollo Anteil.

Der Kakao wurde:

  • 5 Tage lang in 5 kg Micro-Lot Chargen fermentiert
  • sechsmal gewendet
  • der Fermentationsprozess wurde von ZOTO kontrolliert
  • Trocknung 14 Tage an der Luft auf Holz
  • Röstung bei 130°C für 18 Minuten

  • Gold International Chocolate Awards Belgium 2019
  • Silver International Chocolate Awards Europe 2019

Die Schokolade hat 70% Kakaogehalt.

  • 65% Kakao
  • 5% Kakaobutter
  • 30% Rübenzucker

Die Schokolade hat eine relativ helle Farbe und Noten von Thymian, Waldkräutern, Blumen und Erdnüssen.
