Recipe: 50% Cocoa mass, 10% cocoa butter, 12% milk powder, 28% beet sugar
The post-harvest of the cocoa for the Chocolate was controlled by ZOTO

The cocoa:

Cocoa Mayan Red (winner of the International Cocoa of Excellence Awards 2013)
Origin: Copán Honduras
Fermentation: 5 days - turning 2 times
7 days sun drying in solar tunnel
Roasting: 125°C - 20 minutes

ZOTO's dark milk chocolate with 60% cacao content has lovely notes of caramel and cookie.

The cocoa was purchased at auction at the Chocoa Fair in Amsterdam in 2019. ZOTO has bought a memory 60kg cocoa of the Mayan Red cocoa. They paid 5,66 EUR/ kg. The profit will go to a children's home in San Pedro Sula in Honduras.
