Box fermentation

The Sanduku is a dark, strong and intense, but recognizable chocolate! This box fermented version of our Uganda collection is quite specific and a must try to see if you like it or not. Compare this box fermented version to the heap fermented Chocolate.

This Chocolate is made from Ugandan Chocolate by Semcu, The ITC project is active in African countries to help cocoa farmers improve their products. Fantastic!
We are involved in the Ugandan project and have developed 2 protocols for Semcu: a box fermented cocoa and a heap fermented cocoa. ZOTO has produced 2 chocolates from these, one of which is the regional blend Sanduku.

  • 72%: 67% cocoa - 5% cocoa butter added - 25% beet sugar
