58% Dark Milk - dark milk chocolate from Tobago

This Chocolate is a composition of cocoa beans from the Roxborough plantation on Tobago and the craftsmanship of Mikkel Friis Holm. The idea was certainly born at our Chocolate Gourmet Festival in Hannover, where Duane Dove and Mikkel Fri is Holm met as exhibitors.

Duane is a cocoa farmer and plantation owner. He bought the former sugar cane plantation Roxborough Estate on Eastern Tobago a few years ago and reforested the existing cocoa plants and added new ones. Tobago is a very old cacao growing area, where the variety was Trinitario was created by crossing Criollo and Forastero and was named after the island.

Mikkel Friis Holm is an excellent chocolate maker from Denmark who came up with the idea for the dark milk chocolate. Duane supplies his cocoa beans and Mikkel creates from it the Chocolate. The Chocolate is a Bean-To-Bar Chocolate and a dark milk chocolate, i.e. a milk chocolate with high cocoa content.

I find the 58% Roxborough Estate by Friis-Holm more than successful. But try for yourself !
