Der Kakao kommt aus dem östlichsten Teil von Kuba, aus Baracoa in der Provinz Guantanamo. Baracoa war die erste Hauptstadt von der Insel und ist noch nicht von Touristen entdeckt worden. In den Wäldern wächst Kakao, Bananenbäume und Kokospalmen, die von Kleinbauern gepflegt werden.

Die Schokolade hat 71% Kakaogehalt und Aromen von Rum, Tabak, Rohrzucker, Sahne, Mahagoni und Palmholz. Sie wird in der kleinen Küche von Nicola Knight in Exeter in England hergestellt.

Es ist eine stoneground chocolate, eine auf Stein gemahlende Schokoladen, weil Nicola einen Mélangeur mit Steinmühlen nutzt, um die Kakabohnen und den Zucker zu vermahlen und zu conchieren.
