Bean-To-Bar Schokolade aus St. Petersburg

Die Kakaobohnen für diese Bean-to-Bar Schokolade kommen an Peru aus dem Gebiet um den Fluß Maranon im Norden von Peru in der Cajamarca Region. Bis vor ein paar Jahren glaubte man, dass diese Kakaosorte ausgestorben war. Um das Jahr 2011 wurde per Zufall Kakaobäume mit den seltenen hellen Kakaofrüchten gefunden. Die aromatischen Bohnen haben nicht nur Frucht- und Blumenaroma, sondern auch Aromen von Nuss. Ihr Tanningehalt ist sehr niedrig, was ihre Farbe beeinflusst. Aus diesem Grund sind sie vorwiegend weiß und haben einen delikaten, cremigen Geschmack.

Aus diesem Grund haben wir sie für diese hochprozentige Milchschokolade ausgewählt: mit Milchpulver statt Zucker

Die Schokolade ist:
