This Chocolate is characterized by woody aromas. It is lightly smoked and has some notes of dried fruit, spices, chestnuts and almonds.
The beans were fermented for 4 days, then dried over fire. This is partly due to the humid and often rainy climate of the island, which forces most Javanese farmers to dry their beans over fire, exposing them to smoke. Java Chocolate therefore goes particularly well with smoky/peaty whiskies

Java is Indonesia's most populous island, which also gave its name to one of the country's best-known cocoa varieties. Java cocoa has a high content of Criollo. The variety is characterized by a pronounced smokiness and a light cocoa aroma, but is still full and complex.
