Bean-to-bar chocolate from Honduras

The cocoa comes from Wampusirpi, in the Gracias a Dios department in the middle of the jungle in the northeast on the coast of Honduras. In the east of Honduras, which borders the northeast of Nicaragua, there are several reserves to protect nature. The cocoa grows in the Rio Plátano Biopshere Reserve . The Trinitario cocoa is sustainably grown by small farmers. It is the only fruit they can sell to make a living.

The region is very remote and does not yet have electricity everywhere, mostly diesel generators are used. There are no roads either. The best way to get to the community is by plane or across the Patuca River. Malaria and other contagious diseases are ubiquitous. Just under 6,000 people live in the entire community, which stretches over 2,500 square meters.

Besides cocoa and sugar, chocolate has no other ingredients. Although not certified organic, the cocoa is sustainably grown . The cocoa has aromas of nuts and toast , but hardly any fruity notes.

Monica Pedemonte, the founder of Palato Chocolate lives in the capital of Honduras, in Tagucigalpa in the west of the country.

She provides the Chocolate from the bean to the bar. The chocolate is a bean-to-bar chocolate. The chocolate was refined with:
