The cocoa beans from Madagascar are dried directly in the sun. The extremely hot sun allows the cocoa beans to dry very quickly , which closes the surface of the shell and traps the fruit acid.

The chocolate has pronounced notes of lemon and is ideal for a light mousse au chocolat. If you'd rather try the gentler version of chocolate, try the chocolate made from slowly dried cocoa beans.
