On the island of Madagascar in the Sambirano Valley there are cocoa plantations where excellent cocoa grows. Many good chocolatiers either have their own plantation here, such as Francois Pralus, Michel Cluizel and Bertil Akesson, or they have purchase contracts with the cocoa farmers. This way they are guaranteed to get the best quality cocoa. In addition to the noble variety Trinitario Pralus and Akesson also grow cocoa on their plantations Criollo Cocoa. This has particularly low acidity and many fruity notes of mango and tropical fruits, typical of Madagascar.
