Most cocoa-growing regions are located south of the equator, as the climatic conditions for cultivation are optimal here. Temperatures do not necessarily have to be high, but there should be no temperatures below 20 °C, otherwise the cacao flowers will drop. In addition, the cacao tree needs high humidity and regular rainfall of at least 1,500 mm per year. The ideal combination of all these factors is found in the rainforests of South America and in the West African coastal region.

Due to climatic conditions, the cocoa harvest season is often from May to September. But even here there are regional differences, so that in Ecuador the harvest already begins in February and in Ghana only in October. Basically, it can be said that the beans from South America taste fruitier. The beans from West Africa, on the other hand, usually have a tart and slightly bitter note. Many people find the taste of African beans more intense and aromatic than that of South American cocoa. So if you want to add some variety to your chocolate taste, you should test cocoa from both regions and find out which one you like best.
