Café con Leche - 63% dark milk chocolate with coffee

Production for this exceptionally smooth bar starts with cocoa beans from San Pablo de Borbur, from the Boyaca region of Colombia, then adds Organic from The Green Cane Project, Organic from Organic West Milk and finally whole Ketiara coffee beans sourced directly from Sumatra by local friends of Goodnow Farms, Barrington Coffee Roasters. The coffee beans are finely ground together with the cocoa and sugar in our stone mills.

Ketiara coffee is grown in the forested mountains surrounding Leuser National Park, with the coffee shade-grown in an agroforestry system to protect the local ecosystem. The sublime complexity of the coffee convinced the makers at Goodnow Farms to use this coffee for their Chocolate. Ketiara is a women-run cooperative in the highlands of Sumatra. It has been around for 25 years and is one of the few cooperatives that exports its own coffee and promotes women and younger farmers in the coffee business.

 This bar is sweet and creamy, with a subtle coffee flavor, and the Chocolate chocolate (with flavors of whole grain cookies and roasted marshmallows) adds to the subtle taste.
