"Lawley's Rum" Special Reserve 77% dark chocolate with rum

Lawley's Rum: creating a Chocolate in collaboration with Boston Harbor Distillery, this time with dark New England Style Rum!

The cacao from fine Ecuador nibs, which are also used in the multi-award winning bar "Esmeraldas", are only lightly roasted and then soaked in over 50 bottles of Lawley's Rum. This allows the sweet complex rum flavors of vanilla, oak, caramel and hints of rye to infuse thoroughly into the nibs before they are carefully dried and and ground. The addition of freshly pressed Esmeraldas cocoa butter ensures that this Chocolate is more intense in flavor and exceptionally smooth. The sweet molasses and caramel notes of the rum combine perfectly with the red fruit flavors of the Esmeraldas cocoa to create a delicious blend of Chocolate and rum.

Goodnow sources the high-quality Nacional hybrid cacao from the Salazar family in northern Ecuador's Esmeraldas province, where they own a 100-acre cacao farm with state-of-the-art cacao fermentation and drying facilities. The crops are large enough to ferment and dry themselves, allowing a high degree of control over these important post-harvest processing steps. This results in beans of very high quality and exceptional flavor. The result is a combination of berry jam and Cabernet grapes. Esmeraldas has a low acidity and a slightly astringent taste. A long and satisfying aftertaste makes this Chocolate a Indulgence.
