The cocoa from fine Ecuadorian nibs, which are also used in the multi-award-winning "Esmeraldas" bar, are only lightly roasted and then soaked in over 55 bottles of New England Rye.

This allows the sweet complex rum flavors of vanilla, oak, caramel and a hint of rye to infuse thoroughly into the nibs before they are carefully dried and ground. The addition of freshly pressed Esmeraldas cocoa butter ensures that this Chocolate is more intense in flavor and exceptionally smooth. The sweet molasses and caramel notes of the rum combine perfectly with the red fruit flavors of the Esmeraldas cocoa to create a delicious blend of Chocolate and rum.

Goodnow sources the high-quality Nacional hybrid cocoa from the Salazar family in northern Ecuador in the province of Esmeraldas, where they own a 100-hectare cocoa farm with state-of-the-art cocoa fermentation and drying facilities. The harvests are large enough to be able to ferment and dry themselves, which allows a high degree of control over these important post-harvest processing steps. This results in beans of very high quality and exceptional flavor. The result is a combination of berry jam and Cabernet grapes. Esmeraldas has a low acidity and a slightly astringent taste. A long and satisfying aftertaste makes this Chocolate a Indulgence.
